Baked Truffle Zucchini Fries

This is one of our favorite side dishes! It goes great with just about any meal. Try it as a side dish with a pork loin, steak or chicken. It is quick, easy, delicious, and will wow any guest that you bring over.

 

Ingredients:

 

2 Zucchinis

2 eggs

1/8 cup milk

1 tablespoon Black Truffle Oil

2 cups almond flour

2 tablespoon Black Truffle Salt

 

Instructions:

 

Preheat the oven to 350 degrees. Thinly slice the two zucchinis and set aside. Whisk the eggs, milk and Truffle oil together in a shallow pie dish and set aside. Mix the almond flour and truffle salt in another shallow pie dish. Take the sliced zucchinis and toss in the egg, milk and oil mixture. Once they are all coated, toss in the flour and salt mixture. Coat the zucchinis. Lay out the coated zucchinis on a cookie sheet. 

 

Place the cookie sheet in the preheated oven and bake about 25 mins or until golden brown. Add to your dinner and enjoy!
