Grab a seat at Chef Tammi’s “Spanish Table”. Not only will you learn to make a Valencian style Paella, but you will get to try a variety of authentic Spanish ingredients. The evening begins with a variety of tapas but the star of the dinner will be the Paella Mixta. From the coast of Spain, where the dish originated, this paella is loaded with seafood, Spanish chorizo and authentic flavors.
Menu:
The Best of Spain Tapas: goat cheese stuffed piquillo peppers, gazpacho shooters and a charcuterie of Spanish meats, fish, cheese, olives and nuts ~ served with a glass of fancy sherry.
Patatas Bravas with Garlic Aioli: crispy roasted potatoes in a fiery sauce of tomatoes and smoked paprika ~ served with a garlicky dipping sauce
Paella Mixta: rice, sofrito, saffron and paprika make up the base and then this paella is loaded with shrimp, lobster, clams, mussels, chorizo and chicken ~ cooked until that perfect “socarrat” is achieved.
Pan Con Tomate: Spanish tomato bread is a hearty bread, broiled and topped with heirloom tomatoes, garlic and olive oil ~ a great accompaniment to the paella
Torrijas: a classic Spanish dessert that has long been part of Spanish cuisine ~ bread soaked in milk with a splash of sherry and then fried in olive oil ~ dusted with cinnamon and sugar and drizzled with honey ~ made in class
Carajillo: Licor 43, a Spanish liqueur gets turned into the perfect after-dinner cocktail ~ one sip of this spiked coffee and you’ll taste the magic
