Watermelon & Cucumber Salad With Honey Vinaigrette

Ingredients:

  • 3 cups Watermelon, cubed
  • 1/2 Cucumber, cubed
  • 10-15 Mint Leaves, minced
  • 2 Tbsp Honey Balsamic Vinegar
  • 1/4 cup olive oil (Sicilian Lemon or Basil Genovese)

Instructions:

  1. In a bowl combine all ingredients and toss.
  2. Allow to sit if the fridge for at least an hour, stirring occasionally.
